Wacky Cake Recipe

So, here's the recipe for Wacky Cake:

1-1/2 cups sifted flour
1 cup sugar
3 T. cocoa
1 tsp soda
dash salt

1 T. vinegar (pref. Apple Cider, but any kind will work)
1 tsp. vanilla
6 T. salad/veg oil
1 cup water

Mix flour, sugar, cocoa, salt, and soda. Put in 8" square pan. Make 3 holes in mixture. In one put the vanilla, in one salad oil, and in the other vinegar. Pour water over all this and mix well with a fork. Mixture will be thin. Bake for 25 minutes in preheated 350 oven.
Eat hot or cold, with butter or other frosting, or without frosting.


I doubled it for a 9x13 pan, and I only put in 10 T of oil, not 12. Of course, you can sub some applesauce for the oil, too.

My dad grew up with this cake, and then we did, too. I'm pretty sure we usually didn't have frosting on our bday cakes, but it was good w/out it! It's a fun and different way to make a cake...I think it gets its name from the wacky way you mix it all together...it was concocted, so I've heard, during WWII when things like eggs, milk and butter were rationed, so some genius figured out how to get a chocolate cake fix without all those hard-to-get goods.
